We started doing barbecue because… well, we Love Barbecue! Over the years, that love has translated into methods. For heat, we use all-natural lump charcoal – no briquettes here! For additional smoke we use applewood from our own trees. And rubs? We make our own and even sell them here.
Finally, in the cooking process, in our custom-made (in Pawlet!) barbecue trailer, we take our time and let the low heat, smoke, and rubs do their job. The results bear the need for a taste. Or two..
For in-house catering, we have some very attractive packages, particularly outside of regular business hours.
